Our Story
By Chelsey PeCoy, Founder of Lighthearted Kitchen
Lighthearted Kitchen was born while I was traveling. No matter where I found myself, one truth remained. . there isn't a lot of honesty in our food system. From a young age, I vividly recall the frustration of reading every label at the grocery store, questioning the additives and chemicals hidden on the package. As I went through the aisles, I asked, "Why do these brands prioritize profit over health?", "Do they understand the long-term health consequences of these ingredients?" This awareness sparked a deep-seated desire for change within me.
I made it my mission to seek out quality, nourishing food that supported my well-being. I refused to settle for anything less. It became evident that true nourishment was found in the simplicity of local, seasonal ingredients bursting with nutrients, color, and flavor.
Our Values
Transparency: We are committed to promoting food transparency and honest communication, fostering a deeper connection between our communities and their food systems.
Soil Health and Regenerative Agriculture: The foundation of quality food starts with the soil. We support regenerative agricultural practices that prioritize soil health, biodiversity, and sustainability, ensuring a thriving ecosystem for generations to come.
Education: We believe in the power of education to empower individuals to make healthier choices. By providing opportunities for learning about healthful eating and the importance of nutrient-dense food, we can empower our communities.
This journey fueled my passion to create Lighthearted Kitchen — where our dishes serve as a vehicle for healing, connection, and regeneration. Lighthearted Kitchen is more than just a culinary experience; it's a testament to my unwavering belief that the best quality food starts with the best quality soil. Join me on this journey as we rediscover the joy of eating and living in harmony with nature.
Our Mission
Foster more honesty and transparency in the food system.
Educate our guests on the importance of sourcing ingredients from local farms practicing sustainable and regenerative farming methods.
Offer an experience that nourishes our communities with food and enriches them with knowledge.
“Connected to each bite, ourselves, those around us, and the outdoors. Fueled by a love of health and wellness, I wanted to create an experience where people leave with more knowledge of the food they are eating and why. Come with an open mind and leave with a full heart and stomach.”
